Highlighting the Washed Process
This particular coffee was processed using the Washed Method. This meticulous approach involves removing the coffee cherry’s outer fruit layers (pulp and skin) before drying the beans. Here’s a breakdown of the Washed Process:
Cherry Removal
The ripe coffee cherries are carefully picked and pulped to reveal the green coffee beans inside.
Water Tanks and Agitation
The beans are placed in water tanks and gently agitated to remove any remaining fruit flesh. This step ensures a clean and consistent flavor profile.
Soaking and Separation
The beans are soaked in water for a specific time. During this soaking, any less dense or defective beans will float to the surface, allowing for easy removal.
Drying and Hulling
Once soaked, the beans are thoroughly rinsed and then spread out to dry in the sun on raised drying beds. Finally, the dried beans are hulled to remove the remaining parchment layer, revealing the familiar coffee beans ready for roasting.
